First time to Ibiza

Hi would like some advice on place to stop in ibiza.
We are a couple in our 40s and 50s and would like somewhere where there are some decent places to eat out at night but no where that's to over built or tacky.
Must have good clean beach and prefer to stop in villa or apartment not into all inclusive .
Any recommendations on things to do and see would be great as will hire a car .
Love walking and visiting places of interest.
